2 large flour tortillas (10-12 inches in diameter)
1 cup cooked grilled chicken, shredded
1 ½ cups shredded cheese blend (cheddar and Monterey Jack)
½ teaspoon ground cumin
½ teaspoon garlic powder
½ teaspoon onion powder
Salt and pepper, to taste
2 tablespoons olive oil
½ cup sour cream
2 tablespoons mayonnaise
1-2 tablespoons chipotle sauce
1 tablespoon lime juice
Salt, to taste
Instructions
Prepare the Chicken: Grill your chicken until fully cooked (about 6-8 minutes per side). Let it rest before shredding. Season with ground cumin, garlic powder, onion powder, salt, and pepper.
Make the Chipotle Dip: Mix together sour cream, mayonnaise, chipotle sauce, lime juice, and salt until smooth. Adjust chipotle sauce to desired spice level. Chill in the refrigerator for at least 30 minutes.
Assemble the Quesadilla: Place one tortilla flat, sprinkle half of the shredded cheese on one half, layer with shredded chicken, then top with remaining cheese. Fold the tortilla over.
Cook the Quesadilla: Heat 1 tablespoon of olive oil in a skillet over medium heat. Place the quesadilla in the skillet and cook for 3-4 minutes until golden brown and cheese begins to melt.
Flip and Finish: Flip the quesadilla and add the second tablespoon of olive oil if necessary. Cook for an additional 3-4 minutes until golden brown and crispy.
