1 pound Italian sausage (mild or spicy)
1 medium onion, diced
3 cloves garlic, minced
3 cups fresh spinach, roughly chopped
1 cup heavy cream
1 cup chicken broth
1 tablespoon olive oil
1 teaspoon Italian seasoning
Salt and pepper, to taste
Freshly grated Parmesan cheese (optional)
Chopped fresh basil or parsley for garnish
Instructions
Gather all your ingredients and prepare them. Dice the onion, mince the garlic, and chop the spinach.
In a large skillet over medium heat, add the olive oil. Once hot, add the Italian sausage, breaking it into smaller pieces. Cook until browned and fully cooked, about 6-8 minutes. Use a slotted spoon to remove the sausage from the skillet and set it aside.
In the same skillet, add the diced onion and sauté for about 3-4 minutes, or until translucent. Add the minced garlic and stir for 30 seconds.
Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes.
Pour in the chicken broth and scrape the bottom of the skillet to deglaze. Lower the heat and stir in the heavy cream and Italian seasoning. Allow to simmer for 3-4 minutes.
Return the cooked sausage to the skillet, stirring to coat in the creamy sauce. Season with salt and pepper to taste. Simmer for an additional 2-3 minutes.
Remove from heat and garnish with freshly grated Parmesan cheese and chopped herbs, if desired. Serve hot.
