Ingredients
Scale:
1 cup all-purpose flour
2 large eggs
1/4 teaspoon salt
2 tablespoons sugar (omit for savory crêpes)
1 1/2 cups milk (or use almond milk for a dairy-free option)
2 tablespoons melted butter (plus extra for cooking)
Instructions
In a large mixing bowl, whisk together the flour, salt, and sugar until combined. Create a well in the center for the eggs.
Gradually pour in the milk while whisking to combine. Stir in the melted butter. Let it sit for at least 30 minutes.
Preheat a non-stick skillet or crêpe pan over medium heat. Brush the surface lightly with melted butter.
Pour about 1/4 cup of batter into the center of the pan and tilt to spread evenly. Cook for about 1-2 minutes until golden brown.
Carefully flip the crêpe and cook for an additional 1 minute until lightly browned. Transfer to a plate and cover to keep warm.
Fill each crêpe with the desired sweet or savory fillings and serve.
