- 4 large eggs, preferably organic or free-range
- 2 tablespoons milk or cream
- Salt and pepper, to taste
- 1 tablespoon butter or olive oil
- 4 slices of bread (sourdough, whole grain, or bagel)
- 4 slices of cheese (cheddar, Swiss, or American)
- 1 ripe avocado, sliced (optional)
- Hot sauce or pesto (optional)
- Fresh herbs (chives, parsley, or dill) - optional
- Sautéed vegetables (spinach, bell peppers, or mushrooms) - optional
Instructions
- In a medium bowl, crack the eggs and add the milk, salt, and pepper. Whisk until well combined and frothy.
- Place a non-stick skillet over medium heat and add the butter or olive oil. Allow it to heat until melted.
- Pour the egg mixture into the skillet. Let it sit until the edges begin to set, then stir gently to cook evenly.
- Place the slices of cheese on top of the eggs while they are still cooking. Cover the skillet to help melt the cheese.
- Toast the bread slices until golden brown and crispy.
- Once the cheese has melted, transfer the egg and cheese mixture onto one slice of toasted bread. Add avocado and sauces if desired.
- Top with another slice of toasted bread, cut the sandwich in half if desired, and serve immediately.
