  1. Wash the cucumbers thoroughly under cold running water. If using regular cucumbers, peel them. For English cucumbers, the skin can be left on. Slice thinly, about 1/8 inch thick.
  2. In a mixing bowl, add the sliced cucumbers and sprinkle with salt. Toss gently to coat and let sit for 10-15 minutes to draw out moisture.
  3. While the cucumbers are draining, prepare the dressing by combining sour cream (or yogurt), apple cider vinegar, sugar, dill, and black pepper in a separate bowl. Whisk until smooth.
  4. After the cucumbers have released moisture, drain them and pat dry with paper towels.
  5. Transfer the cucumbers to a large mixing bowl, add the sliced red onion on top.
  6. Pour the dressing over the cucumbers and onions. Gently fold together until evenly coated.
  7. Cover the salad with plastic wrap and refrigerate for at least 30 minutes before serving.
  8. Give the salad a gentle stir before serving and adjust seasoning if necessary. Garnish with extra dill and serve chilled.
