1 pound ground beef, preferably 80/20
1 small onion, finely chopped
2 cloves garlic, minced
1 cup canned black beans, drained and rinsed
1 teaspoon ground cumin
1 teaspoon chili powder
Salt and pepper, to taste
1 cup shredded cheese (cheddar or a Mexican blend)
1 cup sour cream, full-fat
1/2 cup cream cheese, softened
1/2 cup salsa
1 tablespoon lime juice
1/2 teaspoon garlic powder
6 large flour tortillas
1 cup shredded lettuce (optional)
1 medium tomato, diced (optional)
Chopped cilantro for garnish (optional)
Instructions
In a large skillet, over medium heat, add the ground beef. Cook for 5-7 minutes, breaking it apart with a spatula until browned.
Add the chopped onion and minced garlic to the skillet. Sauté for an additional 3-4 minutes until the onion is translucent.
Stir in the black beans, cumin, chili powder, salt, and pepper. Cook for another 2-3 minutes. Remove from heat and mix in 1 cup of shredded cheese until melted.
In a medium bowl, combine the sour cream, cream cheese, salsa, lime juice, and garlic powder. Mix until smooth and creamy.
Lay a tortilla flat on a plate. Spoon a generous amount of the beef filling onto the center of the tortilla, drizzle with the creamy sauce, then fold in the sides and roll up tightly.
Preheat your oven to 350°F (175°C). Place the assembled burritos seam-side down in a baking dish. Pour the remaining creamy burrito sauce over the top.
Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes until the sauce is bubbly.
Remove from the oven, let cool for a few minutes, and garnish with shredded lettuce, diced tomatoes, and chopped cilantro if desired.
