1 baguette (or any similar crusty bread), sliced into 1/2-inch thick pieces
4 tablespoons olive oil, for brushing
2 cloves garlic, halved
2 cups cherry tomatoes, quartered
1/2 pound fresh mozzarella, sliced
1/4 cup fresh basil leaves, torn
2 tablespoons balsamic glaze
Salt and freshly ground black pepper, to taste
Instructions
Preheat your oven to 400°F (200°C). Arrange the baguette slices on a baking sheet.
Brush each slice with olive oil. Flip and brush the other side as well.
Toast in the oven for about 8-10 minutes, or until the slices are golden brown.
Remove from the oven and rub each slice with a halved clove of garlic.
In a mixing bowl, combine the quartered tomatoes, a pinch of salt, and black pepper.
Top each toasted slice with a slice of fresh mozzarella followed by a spoonful of the tomato mixture.
Add a few torn basil leaves to each piece.
Drizzle lightly with balsamic glaze.
