1 lb large shrimp, peeled and deveined
1 ripe mango, diced
1 cup fresh pineapple, diced
1 avocado, diced
4 cups mixed greens (such as spinach and arugula)
1/4 red onion, thinly sliced
1/4 cup fresh cilantro, chopped
1/4 cup olive oil
2 tablespoons lime juice
1 tablespoon honey or agave syrup
1 teaspoon Dijon mustard
Salt and pepper to taste
Instructions
In a medium bowl, season the shrimp with salt and pepper. Optionally, marinate in lime juice for 15 minutes.
Preheat a grill or grill pan over medium-high heat. Grill shrimp for 2-3 minutes on each side until pink and opaque.
In a small bowl or jar, whisk together olive oil, lime juice, honey, Dijon mustard, salt, and pepper until well combined.
In a large bowl, combine mixed greens, mango, pineapple, avocado, red onion, and cilantro. Toss gently.
Add the cooled shrimp to the salad mixture. Drizzle with dressing and toss gently to coat.
