2 teaspoons garlic powder
1 teaspoon onion powder
1 teaspoon paprika (smoked paprika adds depth)
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon salt (adjust to taste)
½ teaspoon black pepper
2 tablespoons fresh rosemary, chopped (or 1 tablespoon dried rosemary)
1 tablespoon fresh parsley, chopped (for garnish, optional)

Instructions
Preheat your oven to 425°F (220°C).
In a large mixing bowl, combine the cubed potatoes with the olive oil. Toss to ensure each piece is coated.
Sprinkle in the garlic powder, onion powder, paprika, oregano, thyme, salt, black pepper, and rosemary. Mix until evenly coated.
Spread the seasoned potatoes in a single layer on a large baking sheet.
Place the baking sheet in the preheated oven. Roast for about 25-30 minutes, flipping halfway through.
Check for doneness; the potatoes should be pierced easily with a fork and golden brown.
