Description
A delightful snack that’s both crispy and cheesy, perfect for a quick meal or as a delicious appetizer.
Ingredients

1 pound ground beef
1 cup shredded cheddar cheese
1 small onion, finely chopped
2 cloves garlic, minced
1 teaspoon chili powder
1 teaspoon cumin
Salt and pepper to taste
10-12 small corn or flour tortillas
Oil for frying (or cooking spray for oven-baked method)
Fresh cilantro, chopped (optional)
Sour cream (optional)
Guacamole (optional)
Pico de gallo or salsa (optional)
Instructions
In a large skillet over medium heat, add the ground beef, onion, and garlic. Cook until the beef is browned and the onions are translucent, about 5-7 minutes. Stir occasionally.
Stir in the chili powder, cumin, salt, and pepper. Mix and cook for an additional 2 minutes. Remove from heat and allow to cool slightly.
Add the shredded cheddar cheese to the beef mixture, stirring until melted and combined.
If using corn tortillas, warm them in a dry skillet for about 30 seconds on each side.
Place 2-3 tablespoons of the beef and cheese filling onto the lower third of each tortilla. Roll them tightly.
Secure the rolled taquitos with a toothpick if necessary.
For frying: Heat oil in a deep skillet over medium-high heat. Add the taquitos, seam side down, and fry until golden brown, about 3-4 minutes on each side.
For baking: Preheat the oven to 425°F (220°C). Place taquitos seam side down on a greased baking sheet. Bake for 15-20 minutes, flipping halfway.
Serve hot, garnished with fresh cilantro and your choice of toppings.
