1 cup cooked quinoa
1/2 cup breadcrumbs (gluten-free if needed)
1 teaspoon smoked paprika
1 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil (plus more for frying)
2 tablespoons tahini or sunflower seed butter
2 tablespoons soy sauce or tamari
2 cloves garlic, minced
1/2 small onion, finely chopped
1 tablespoon lemon juice
1/4 cup chopped fresh parsley or cilantro
Optional: diced bell peppers, grated carrots, or spinach
Instructions
In a large bowl, combine the cooked lentils, cooked quinoa, and breadcrumbs. Mix well until all dry ingredients are thoroughly combined.
In a separate bowl, whisk together the olive oil, tahini, soy sauce, minced garlic, chopped onion, and lemon juice until smooth.
Pour the wet mixture into the dry mixture, and add the smoked paprika, cumin, salt, pepper, and any optional toppings or add-ins you prefer. Stir until everything is evenly mixed.
Cover the mixture and refrigerate for at least 30 minutes.
After chilling, shape the mixture into patties, about 2-3 inches in diameter.
